Pasta bake with feta and tofu

Ingredients for 3 servings:

  • 8 m.-large tomato(s)
  • 1 m.-large zucchini
  • 200g tofu
  • 300 g pasta (macaroni)
  • 200 g feta cheese
  • 2 garlic cloves, very finely chopped or pressed
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 100 g sour cream
  • 100 g crème fraîche, possibly low-fat
  • 100 ml cream, possibly Cremefine
  • salt and pepper
  • 2 tbsp basil, frozen

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pre-cook the pasta in boiling salted water for about 6 minutes. Chop the tomatoes, zucchini, tofu, and feta cheese. Mix the marinade ingredients together in a bowl and add the tofu. For the sauce, mix the sour cream with the crème fraîche, cream, and basil and season to taste with salt and pepper. Place the vegetables in a greased baking dish. Add the pasta and spread the tofu and marinade on top. Pour the sauce over the pasta and sprinkle with the crumbled feta cheese. Bake the dish for about 25 minutes at 200 degrees Celsius.
