Quail Wrapped in Bacon with Wine Sauce

The perfect quail wrapped in bacon with wine sauce recipe with a picture and simple step-by-step instructions.

  • 4 Quail
  • 4 Rosemary sprigs fresh
  • 2 Garlic cloves
  • 750 ml Wine
  • 2 small Onions
  • Chilli salt
  • Pepper
  • 8 Discs Bacon
  • 40 g Butter
  1. Rub the quail well inside and out with a mixture of salt and pepper. Put a cut clove of garlic, rosemary sprig and approx. 10 g butter into each quail. Then border the quails with two slices of bacon each and place them close together in a cast iron baking pan, pour on the wine and add the onions to bake at 200 degrees for about 30 minutes (depending on size).
  2. Take out the quail and keep it warm. Pour the sauce through a sieve, collect it in a saucepan and reduce it. Season again to taste.
