Quail Wrapped in Bacon with Wine Sauce
The perfect quail wrapped in bacon with wine sauce recipe with a picture and simple step-by-step instructions.
- 4 Quail
- 4 Rosemary sprigs fresh
- 2 Garlic cloves
- 750 ml Wine
- 2 small Onions
- Chilli salt
- Pepper
- 8 Discs Bacon
- 40 g Butter
- Rub the quail well inside and out with a mixture of salt and pepper. Put a cut clove of garlic, rosemary sprig and approx. 10 g butter into each quail. Then border the quails with two slices of bacon each and place them close together in a cast iron baking pan, pour on the wine and add the onions to bake at 200 degrees for about 30 minutes (depending on size).
- Take out the quail and keep it warm. Pour the sauce through a sieve, collect it in a saucepan and reduce it. Season again to taste.
