Ingredients for 1 servings:
- 200 g wheat flour type 550
- 200 g wholemeal emmer flour
- 200 g wholemeal spelt flour
- 2 tsp salt
- 4 tbsp syrup (date syrup)
- 40 g butter
- 70 g Brazil nuts
- 30 g flaxseed
- 30 g sesame seeds
- 400 ml water
- 2 sachets of dry yeast

Crispy, airy nutty wholemeal bread for the BBA
Split the Brazil nuts into two or three pieces using a sharp knife. Put all ingredients except the yeast into the bowl of your bread maker. Put the yeast in the yeast container. Program: Whole Wheat Quick 3 hours With my BBA, I have to set the size XL for 600g of flour (500g L and 400g M). If you’re wondering about the slightly larger amount of yeast: This was an experiment to see if the bread would be nice and light and moist despite the high whole wheat content. The experiment was successful. Vegans can replace the butter with oil. Instead of date syrup, you can use your favorite sugar. This bread was eaten so quickly, I didn’t have time to take a photo.
