Ingredients for 4 servings:

  • 300 g tomatoes
  • 125 g smoked fish, e.g. butterfish
  • 2 m.-sized baguette(s)
  • 4 m.-sized eggs
  • 6 tbsp cream
  • 3 tbsp chives, cut into fine rolls
  • 2 tbsp butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Slice the tomatoes and cut the baguette into thick slices. Spread the bread slices thinly with butter and top with the tomatoes. Whisk the eggs and cream in a bowl. Season with salt, pepper, and a little nutmeg. Heat the butter in a pan and add the egg mixture, sprinkled with chives, and let it set. Cut the smoked fish into the thinnest slices or pieces possible. Place the scrambled eggs on top of the tomatoes and scatter the smoked fish on top.
