Light arugula – tomato – feta salad with balsamic dressing

Ingredients for 2 servings:

  • 1 handful of cherry tomatoes
  • 1 box of arugula
  • 1 pack of feta cheese
  • 50 ml balsamic vinegar
  • 50 ml olive oil
  • 1 tsp mustard (medium or mild)
  • 1 tsp honey

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the arugula, shake it dry, and cut it into bite-sized pieces with scissors. Wash and halve the tomatoes and place them in a bowl with the arugula. Combine the balsamic vinegar, oil, mustard, and honey in a small bowl and whisk well. Mix the dressing into the salad and sprinkle the crumbled feta over the salad.
