Pizza – pancakes with ajvar

Ingredients for 4 servings:

  • 2 bell peppers, red or other vegetables or mushrooms
  • 50g salami
  • 300 g flour
  • 3 eggs
  • 150 ml mineral water
  • 300 ml milk
  • 1 tsp salt
  • pepper
  • 5 tbsp ajvar
  • 1 tbsp pizza seasoning or herbs de Provence
  • 3 tbsp oil
  • 50 g cheese (e.g. Parmesan, Emmental, medium-aged Gouda), grated

Working time approx. 25 minutes; Total time approx. 25 minutes

Kids love it!

Preheat the oven to 50 degrees Celsius (122 degrees Fahrenheit). Wash and trim the bell peppers, then cut them into small cubes and cut the salami into strips. Mix the flour with the eggs, mineral water, milk, salt, pepper, ajvar, and pizza seasoning until a smooth batter forms. Stir in the pepper cubes. Heat the oil in a pan and fry the batter into pancakes, one at a time. Cook for about 4 minutes per side, until golden brown. Turn over, sprinkle with salami strips and grated cheese. Cover the pan so the cheese melts. Keep the finished pancakes warm in the oven. You can experiment with the vegetables; they also taste great with spring onions, zucchini, and mushrooms. You can also replace the salami with ham. Do not use the spicy ajvar for children.
