Ingredients for 4 servings:
- 5 eggs
- 500 ml milk
- 100 ml carbonated mineral water
- 400 g flour
- 1 tsp baking powder
- 1 pinch of salt
- 2 small bell peppers, diced
- e.g. salami or chorizo, sliced
- some Parmesan, grated
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
with salami or chorizo, parmesan and peppers
Mix the first 6 ingredients in a bowl with a mixer until the batter is nice and smooth. Heat the olive oil in a pan and add a sufficient amount of batter to the hot pan. Immediately scatter a handful of diced bell peppers and the sausage slices on top. Press down lightly. Drizzle a little batter on top and sprinkle with freshly grated Parmesan cheese. When the underside of the pancake is nicely browned, flip it over. The pancake is done when the other side is also golden brown. Season with salt and pepper. Serve with a mixed salad. You can vary the pancakes by using mushrooms or zucchini, for example.
