Sweet curd spirals

Ingredients for 4 servings:

  • 500 g pasta (spiral pasta)
  • 150 g sugar
  • 500 g quark (cottage cheese)
  • 4 eggs
  • ½ lemon(s), juice and zest
  • Butter, 250 ml Rama Cremefine for cooking
  • Raisins, as desired
  • 150 g walnuts, roughly chopped
  • whipped cream

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the pasta in salted water. Beat the egg whites until stiff. Beat the egg yolks with sugar until creamy, stir in the curd and lemon juice, add the nuts and egg whites, and mix with the cooked and drained pasta. Stir in the Rama Creme Fine (cream fine), adding raisins if desired. Grease a baking dish well and add the pasta. Bake in a preheated oven at 170°C (convection oven) for about 30-35 minutes (depending on the size of the dish) until the surface is a nice golden yellow and the inside is soft. This goes very well with cherry pudding or pineapple with cranberry compote. Serve with dollops of whipped cream.
