Black bean plum cake

Ingredients for 1 servings:

  • 200 g sunflower seeds
  • 500 g mineral water, carbonated
  • 400 g beans (black), grind
  • 1 tbsp coffee beans, with grind
  • 2 grains of allspice, grind
  • 1 pinch of salt
  • 150 g sugar, or more
  • 1 bag of baking powder, for 500 g flour
  • 1 bag(s) vanilla sugar, bourbon
  • 20 plums, soft, quartered
  • 6 tbsp schnapps (plum brandy)

Instructions

Working time approx. 30 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 10 hours

Lightly roast the sunflower seeds, grind them (almond mill), and blend them finely with a hand blender until the natural fat is released. Stir in a little seltzer to form a lump-free paste. Add the remaining water and plum brandy to the bowl of a food processor. Slowly rotate the mixing hook. Combine the remaining dry ingredients and slowly add them to the running mixing bowl. Once everything is well blended, mix the batter with the mixing hook on full speed for at least 3 minutes. Remove the mixing hook and fold in the quartered plums. Pour into a 30 cm loaf pan lined with baking paper, shake until smooth, and place in a cold oven at approximately 150°C (convection oven) for approximately 85–90 minutes. Check with a needle. Cool completely before slicing. My own recipe.
