Ingredients for 1 servings:

  • 500 g flour
  • 10 g salt
  • 15 g yeast, fresh
  • 150 ml milk, warm
  • 1 tsp sugar
  • 2 eggs
  • 100 g butter, soft
  • 350 g cheese, grated medium-aged Gouda or ready-made gratin cheese
  • 50g Gorgonzola
  • 2 eggs
  • salt and pepper
  • nutmeg
  • Butter, for the mold and for spreading

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 30 minutes

Make a dough from the ingredients. It’s best to knead it thoroughly in a food processor. Keep warm and let it rise. In the meantime, make the filling. Mix everything together and season well to taste. Roll out the risen dough (with the small amount of yeast it can rise for a few hours. If you’re in a hurry, you can use more yeast) to a diameter of approx. 50 cm and place it in a greased 28 cm springform pan. Add the filling and fold in the overhanging dough flaps. Leave one part uncovered. Bake in a preheated oven at 175° for 30 minutes, then reduce the temperature to 150° and bake for a further 30 minutes. You can brush the finished bread with melted butter, but this is not necessary. It tastes great cold in small strips on a party buffet. Leftover Camembert can also be used in the filling.
