Ingredients for 1 servings:

  • 100 g flour
  • 50 g butter
  • 1 salt and pepper
  • 3 eggs
  • 120 g mountain cheese (Allgäu)
  • 50 g blue cheese
  • 150 ml milk
  • 150 ml cream
  • Paprika powder, sweet
  • Fat for the molds

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes

makes 8 pieces.

Knead together flour, butter, a pinch of salt, and 1 egg. Refrigerate for approx. 30 minutes. Grease 4 tartlet tins (8 cm each). Roll out the dough and cut out 8 circles (approx. 12 cm). Line the tins with the dough. Finely grate the mountain cheese and finely chop the blue cheese. Mix the two. Whisk together the milk, cream, and the remaining eggs. Season with paprika and pepper. Divide the cheese mixture among the tins and pour the egg mixture over the top. Bake for approx. 20 minutes at 200°C. Can be eaten hot or cold.
