Spaghetti in sardine and garlic sauce with arugula

Ingredients for 3 servings:

  • 300g spaghetti
  • oil
  • 1 large onion(s), finely chopped
  • 1 garlic clove(s), thinly sliced
  • 2 cans of sardines in oil
  • chili powder
  • salt and pepper
  • 200 ml white wine
  • 125 g arugula

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook the spaghetti in salted water until al dente, then drain. Heat a little oil in a large pan and fry the finely chopped onions until translucent. Add the very thinly sliced ​​garlic and fry briefly, but do not let it brown. Remove the sardine fillets from the tins, mash them with a fork, and add them to the pan. Season with chili powder, salt, and pepper, then deglaze with the white wine. Simmer briefly, season to taste, and then toss the spaghetti in the pan. The dish is already ready to eat, but it’s even better with the arugula: Wash the arugula and toss it in the pan with the spaghetti, letting it heat briefly(!) until hot. It’s very quick to prepare and tastes excellent. A dry white wine goes well with it.
