Ingredients for 2 servings:

  • 1 pack of puff pastry
  • 5 tbsp cream cheese
  • ¼ pumpkin(s)
  • 100 ml orange juice
  • ½ tsp curry powder
  • possibly milk or egg for brushing

For this recipe, you’ll need a Tupperware dough trap, or you can simply use a glass to cut out circles. The recipe is very simple, quick to make, and great as a snack for kids, for a picnic, or just for on the go. First, dice the pumpkin. Choose the size of the pieces according to your taste. Cook the cubes in a pan with a little water and orange juice until soft, then season with a little curry powder. Let the whole thing cool slightly. In the meantime, prepare the puff pastry circles. Spread them with a little cream cheese, then add about 1-1 1/2 tablespoons of the pumpkin filling. Now close the circles, place them on a baking sheet, and bake at 180-200 degrees Celsius for about 15 minutes. You can also brush the pastries with milk or egg before baking to give them a nice brown finish.
