Ingredients for 2 servings:
- 4 eggs
- 125 g brown rice
- 100 g vegetable broth, homemade
- 30 g soy sauce
- 20 g honey
- 1 pepper, red
- 4 slices of Serrano ham
- Sea salt and pepper, black
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Simple egg and rice dish
Whisk the eggs, season with salt and pepper, and fry in a large pan until set on top, then keep warm. Meanwhile, cook the rice according to the package instructions and then drain. Halve the peppers lengthwise, remove the seeds, and slice into thin strips. Combine the soy sauce, honey, vegetable stock, and rice. Season with salt and pepper to taste. Let it warm again. Serve the rice with the omelet and ham.
