Lemon chicken on a skewer for grilling

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 tbsp mint, fresh, finely chopped
  • ½ tsp coriander, ground
  • 1 lemon(s)
  • 1 orange(s)
  • 2 garlic cloves
  • some salt and pepper
  • some mint sprigs, fresh and citrus zest

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 10 minutes; Total time approx. 8 hours 30 minutes

Cut the chicken breast fillets into approximately 2.5 cm pieces and place them in a large freezer bag. Finely grate one orange and one lemon and squeeze the juice from each. Peel the garlic cloves and press them through a garlic press. Place them in a small bowl along with the honey, olive oil, mint, and coriander and mix well with a hand blender. Season to taste with salt and pepper. Pour this marinade into the bag with the meat, seal the bag tightly, and knead everything thoroughly with your hands until all the meat cubes are coated with the marinade. Let it marinate in the refrigerator for at least 8 hours, repeating the kneading process occasionally. Heat the grill. Meanwhile, remove the chicken cubes from the marinade and let them drain on kitchen paper. Please reserve the marinade. Now thread the meat cubes onto long metal skewers (shish kebab skewers). Make sure they are not placed too close together, otherwise they will not cook evenly and will remain raw in the middle. Grill the lemon chicken skewers on the grill over medium heat for about 6-10 minutes, turning them regularly and brushing them with the marinade. Don’t let them get too brown! Arrange the grilled skewers on a large serving platter, garnish with a few mint sprigs and citrus zest, and serve immediately. TIP: If you like, you can replace the lemon zest with the same amount of lime zest. Chopped flat-leaf parsley also works well instead of the chopped mint.
