Cheese and onion rings

Ingredients for 15 servings:

  • 2 large onions
  • 100 g cheese, sliced ​​or whole
  • 5 tbsp flour
  • 6 tbsp breadcrumbs
  • 2 eggs
  • e.g. salt and pepper
  • e.g. oil for frying or butter or clarified butter for frying

Party recipe

Peel the onions and slice straight across both sides. Then cut them crosswise into three roughly equal-width slices. Cut the slices into onion rings and arrange them according to size. Stack the onion rings one size apart. For example, place the third onion ring inside the first and the fourth on the second-largest ring. This leaves space between the rings, which you then fill with cheese strips. Cut the cheese into strips. Their width should be approximately the same as the height of the onion rings. Line the inside of each larger onion ring with the cheese strip, then insert the smaller ring and press down. Repeat this process with all the other onion rings. Then place them in the freezer for about an hour. Place the flour, breadcrumbs, and eggs on separate plates. Season the eggs generously with salt and pepper and whisk to combine. Bread the cooled onion rings in the order flour, egg, breadcrumbs, and egg, breadcrumbs. Heat oil for deep-frying or butter or clarified butter for frying. Add the breaded cheese and onion rings in batches and fry for about 4-5 minutes, or bake. Then remove and drain on kitchen paper. Serve with a dip or ketchup, or garnish with fresh herbs.
