Cranberry curd cheese with cranberry foam

Ingredients for 4 servings:

  • 250 g quark (cottage cheese)
  • 5 tbsp flour
  • 2 eggs
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 250 g blueberries (cranberries)
  • 250 ml yogurt
  • 125 ml cream
  • 4 tbsp jam (cranberry)
  • some butter

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Mix the curd cheese with flour, eggs, salt, and vanilla sugar until smooth. Rinse the cranberries and carefully fold them into the curd mixture. Heat a little butter in a pan. Using a spoon, scoop out dumplings about 4 to 5 cm in diameter from the dough and fry them until golden brown on both sides. For the cranberry foam, whip the cream until stiff. Mix the yogurt with the blackcurrant jam and carefully fold in the cream. Arrange the cranberry and curd cheese cakes with the cranberry foam on plates and serve immediately.
