Ingredients for 2 servings:
- 2 chicken breast fillets, approx. 400 g
- 125g mozzarella
- ½ bunch parsley
- 2 tbsp, heaped ricotta
- 100 g tomato sauce
- 4 tbsp olive oil
- 2 basil leaves, optional
- salt and pepper
- Garlic powder or 1 clove per serving
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Make a cut in the middle of the chicken breast with a knife and open the chicken breast. Wash and chop the parsley. Stuff the chicken breast with ricotta and parsley and sprinkle with a little pepper and garlic powder. Close the chicken breast and season with pepper and salt. Add the olive oil to a baking dish and place the chicken breasts in the baking dish. Spread the tomato sauce evenly over the top. Tear the mozzarella over the chicken breasts and season everything again with pepper. Arrange the basil leaves on top. Bake in an oven preheated to 200°C (top/bottom heat) for about 30 minutes on the middle rack. Serve with pasta, potatoes, or a salad.
