Baked turkey schnitzel

Ingredients for 4 servings:

  • 4 turkey schnitzels
  • 1 m.-large zucchini, green
  • 2 m.-sized onion(s)
  • 2 m.-large pointed peppers, red
  • 12 small cherry tomatoes
  • 350 g feta cheese or other brine cheese
  • some herbal salt
  • some herbs, Italian or pizza herbs

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

simple but sophisticated

Finely chop the onions and thinly slice the zucchini lengthwise. Fry the onions in a pan with a little oil until translucent, then add the zucchini slices, season with herb salt and fry for about 5 minutes. At the same time, fry the turkey schnitzels in a second pan until medium-rare. Meanwhile, cut the pointed peppers into pieces approx. 1 x 1 cm and halve the tomatoes. Cut the cheese into slices approx. 3 mm thick. Preheat the oven to 180 °C (top/bottom heat). First, arrange the zucchini and onions in a large, shallow baking dish. Place the schnitzels on top, cover with the cheese slices and sprinkle with the pizza herbs. Arrange 3 half tomatoes on each schnitzel and distribute the pepper pieces evenly on top. Place the dish in the hot oven for about 15 minutes. Serve in the dish. Rice with ajvar is a good side dish. Tip: If you don’t like brine cheese, you can replace it with any grated cheese (e.g. Gouda).
