Ingredients for 1 servings:
- 100 g butter
- 175 g sugar
- ¼ tsp salt
- 3 small eggs
- 1 jar cherry(s) (cocktail cherries), approx. 130 g, drained, chopped
- 2 tbsp cherry juice
- 400 g flour
- 1 tsp baking powder
- Coconut oil for frying

Swiss carnival pastries
Cream the butter until soft, add the sugar, salt, and eggs, and stir until the mixture is light in color. Mix in the chopped cocktail cherries and their juice. Sift in the flour and baking powder and combine everything to form a dough. Let the dough rest in the refrigerator for about 1 hour. On a lightly floured surface, form the dough into finger-thick rolls, cut these into approximately 6 cm long pieces, and shape them into shanks. Deep-fry the shanks in batches in coconut oil at approximately 160 degrees Celsius until light brown; this takes about 4 minutes. Remove from the pan and drain on a wire rack lined with kitchen paper.
