Ingredients for 6 servings:
- 500 g strawberries
- 125 ml water
- 125 g sugar
- 1 lemon(s), organic, juice and zest
- 1 egg white, lightly blended
- 10 mint leaves, cut as finely as possible
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 49 minutes
Boil the water and sugar for 4 minutes, then let cool. Clean and wash the strawberries and chop them in a blender. Pass the berries through a sieve and mix with the now cooled sugar syrup. Add the mint, lemon juice, and lemon zest and mix thoroughly again with a hand blender. Finally, fold in the egg whites. Pour the mixture into an ice cream maker with a compressor to make sorbet.
