Ingredients for 2 servings:
- 250 g minced pork
- 2 shallots, possibly more, up to 4 pieces
- Sea salt
- Pepper, white from the mill
- e.g. parsley
- e.g. oregano
- e.g. olive oil
Instructions
Working time approx. 5 minutes; Total time approx. 5 minutes
Finely dice the shallots. Finely chop the parsley and oregano (amount depends on your taste; I use about 3-4 stalks of parsley and about the same amount of oregano – just the leaves, of course). Chopping extracts all the aromatics from the herbs. Dried herbs aren’t ideal here, as the whole thing will be eaten raw. Mix everything thoroughly with the olive oil and the minced pork. Use just enough oil to make the mixture smooth; there shouldn’t be any oil floating around in the bowl. Season to taste with salt and freshly ground pepper (sea salt or, for a more refined flavor, fleur de sel, provide a more delicate flavor than plain salt). Spread the minced pork on 6-8 half-rolls and enjoy.
