Cauliflower and potato gratin

Ingredients for 4 servings:

  • 400 g potatoes
  • 400 g cauliflower, in florets
  • 200 ml skimmed milk
  • 200 ml vegetable stock
  • 1 tsp lemon(s) – zest, grated
  • ½ tsp thyme
  • 1 pinch of nutmeg
  • salt and pepper
  • 40 g cheese, grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Alternate potato slices and cauliflower florets in a non-stick baking dish. Bring skimmed milk and vegetable stock to a boil, then mix with all the spices. Pour the mixture over the potatoes and cauliflower florets. Cover the gratin with aluminum foil. Bake in the oven at 200°C for 40 minutes. Then remove the foil. Sprinkle the gratin with 40g of Emmental cheese and bake for another 15 minutes.
