Ciperine's spiced cashews

Ingredients for 1 servings:

  • 140 g cashew nuts, unsalted
  • 1 ½ tsp cumin powder
  • 1 pinch of chili powder
  • 1 pinch(s) of sugar
  • ½ tsp salt
  • 20 g butter, melted
  • 1 tsp sunflower oil
  • 1 lemon(s) (organic), finely grated peel

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 33 minutes

Simple, sophisticated, delicious snack with wine, beer or just in between

Mix all ingredients, except the lemon zest, thoroughly. Spread the nuts side by side on a baking sheet lined with parchment paper and bake in the oven at 160°C (conventional or fan/convection oven) for 18 minutes. Once cooled, mix with the grated lemon zest. I’ve experimented with the baking time, but I find 18 minutes to be perfect. Baking longer can make the spice mixture bitter; baking for less time means the flavors won’t fully develop.
