Grandma's baked quark cakes

Ingredients for 4 servings:

  • 2 eggs, separated
  • 250 g low-fat curd cheese
  • 3 tbsp milk
  • 125 g flour, sifted
  • 1 lemon(s), untreated, zest
  • 3 tbsp sugar, fine
  • 1 pinch of cinnamon
  • 250 ml oil for frying, about

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine egg yolks, quark, milk, flour, and lemon zest. Let stand for 30 minutes. Beat egg whites until stiff peaks form, adding a pinch of salt and 1 tablespoon of sugar. Fold in the beaten egg whites. Heat the oil in a high-sided pan to approximately 180°C. Drop the batter into the oil, tablespoon at a time. Bake for 3-4 minutes, turning once. Drain on kitchen paper. Roll in the sugar/cinnamon mixture. You can keep the cakes warm in the oven at approximately 50°C.
