Ingredients for 1 servings:

  • 90 g flour
  • 1 tsp baking powder
  • 2 packs of orange peel
  • 400 g almonds, ground
  • 100 g marzipan paste
  • 5 dried figs
  • 3 eggs
  • 120 g sugar
  • 1 packet of vanilla sugar
  • ½ tsp bitter almond flavoring
  • 2 tbsp Amaretto
  • 50 wafers, 50 mm
  • 100 g powdered sugar
  • some Amaretto

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 36 minutes; Total time approx. 1 hour 36 minutes

Mix the flour with the baking powder, orange zest, and half of the almonds. Roughly dice the marzipan and chop it in a food processor with 100g of almonds, then stir it into the flour. Remove the hard parts from the figs. Roughly dice the figs and chop them in a food processor with the remaining 100g of almonds, then stir them into the flour. Beat the eggs with the sugar, vanilla sugar, and bitter almond flavoring until frothy and mix into the almond mixture. Stir in the Amaretto. Preheat the oven to 175°C (fan). Spread the batter onto the wafers using the inside of a tablespoon, place them on a baking tray lined with baking paper, and bake for 18 minutes in the lower third of the oven. Mix the icing, brush it on with a pastry brush in circular motions, and let it cool. This quantity makes 2 trays of 25 wafers each.
