Herring and potato casserole

Ingredients for 4 servings:

  • 1 kg potato(s), waxy
  • 8 fish fillets (herring fillets)
  • 80 g butter
  • 2 tbsp flour
  • 125 ml milk
  • 125 ml sour cream
  • 100 g cheese, grated
  • 1 cup breadcrumbs
  • salt and pepper

Peel and wash the potatoes, and cook them whole in salted water. Cut the green herring fillets (alternatively: soaked salted herring fillets or matjes fillets) into small pieces. Butter a baking dish and dust with breadcrumbs. Slice the potatoes and layer them in the baking dish, alternating with the herring fillets. Melt the remaining butter (do not brown) and add flour. Add milk, sour cream, or sour cream and mix everything into a smooth sauce. Season with salt and pepper (or cayenne pepper, nutmeg, and bay leaf). You can also vary it with a different type of béchamel sauce. Finally, sprinkle with the remaining breadcrumbs and grated cheese and bake in the oven at 180°C for 45 minutes. Another variation: add sliced ​​onion.
