Ingredients for 4 servings:

  • 4 small chicken breast fillets
  • 2 sage leaves
  • 1 sprig of rosemary, fresh
  • 2 cloves of garlic
  • 1 egg(s)
  • 2 tbsp breadcrumbs
  • 4 burger buns
  • 4 slices of Italian cooked ham (Prosciutto Cotto)
  • 4 tbsp, heaped Parmesan, grated
  • 4 tomatoes, dried, in oil
  • 4 green olives, pitted
  • 1 small onion(s), cut into fine rings
  • 1 tomato(s), sliced
  • e.g. ketchup
  • e.g. mayonnaise
  • n. B. Salad, fresh
  • salt and pepper

Instructions

Working time approx. 1 hour 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 20 minutes

Chop the chicken breast fillets medium-finely along with the sage, rosemary, garlic, salt, and pepper. Mix in the egg and breadcrumbs, cover, and refrigerate for about 30 minutes. Melt the grated Parmesan cheese in a gently heated pan to create 4 large slices, then let it cool. Form the meat mixture into 4 hamburger patties. Gently fry the patties in a griddle pan, ensuring they are cooked through but not overcooked, or they will become very dry. Toast the buns until crispy. Spread the mayo and ketchup on top, then top with the patties. Top with the roasted prosciutto cotto. Add the chopped tomatoes marinated in oil and the green olives. Top the burgers with tomato slices, onion rings, more mayo/ketchup, and finally, lettuce. Serve and enjoy.
