Ingredients for 4 servings:
- 400 g rice
- 12 beefsteak tomatoes
- 2 onions
- 1 tbsp olive oil
- 300 g minced beef
- 50 g Pepper, green
- 100 g feta cheese
- salt and pepper
- 250 g meat broth
- 50 g cheese, grated
- oregano
- Paprika powder
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Makes 12 tomatoes
Cook the rice until almost cooked. Wash the tomatoes and cut off the tops. Carefully hollow out the tomatoes and lightly salt them. Reserve the mixture. Peel and finely chop the onions and sauté in the oil until translucent. Add the minced meat and fry. Finely dice the peppers and fry them with the rice. Stir the tomato mixture into the mixture (chop them again if there are large pieces). Remove the pot from the heat and let it cool slightly. Cut the feta cheese into small cubes. Stir this into the minced meat mixture. Season with salt, pepper, oregano, and paprika and stuff the tomatoes. Sprinkle some grated cheese over the tomatoes and replace the lid. Transfer the cooked rice to a baking dish and pour in the meat broth. Place the stuffed tomatoes on top and bake in the oven at 180°C for 20 minutes.
