Ingredients for 4 servings:

  • 500 g pasta (spirelli)
  • 2 large beefsteak tomatoes
  • 2 stalk(s) spring onions
  • 2 balls of mozzarella
  • 250 ml cream, reduced calorie
  • Parsley
  • salt and pepper
  • some basil, fresh
  • 1 onion(s), red
  • Margarine or oil

First, slice the red onion and spring onions into rings. Then, dice the tomatoes and add them to the onions in the bowl. Mix with salt and pepper. Then, cook the spiral pasta in salted water. Dice the mozzarella and season with salt and pepper to taste. Add a little margarine or oil to a pan and fry the mixed vegetables for a few minutes. Add the cooked pasta and mix well. Season with salt and pepper again if desired. Now, add the low-calorie cream and mix with the pasta and vegetables. Slice fresh basil into strips and add to garnish. Now, all that’s left is to add the sliced ​​mozzarella. Mix until well blended. (CAUTION: The mozzarella must be stirred continuously, otherwise it will burn.) Non-vegetarians can also add diced chicken or turkey. Please note that the meat should be fried first.
