Turkey steaks with apricot sauce

Ingredients for 4 servings:

  • 1 can apricot(s), 425 ml
  • 1 bunch of spring onions
  • 600 g turkey breast fillet(s)
  • 2 tbsp oil
  • 2 tbsp pepper, pickled green
  • Salt and pepper, white

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Set aside 6 apricot halves, add the rest and their juice to a tall bowl, and puree with a hand blender. Trim, wash, and finely chop the spring onions. Cut the turkey breast into 8 small steaks. Heat the oil and fry the meat for 3-4 minutes on each side. Season with salt and pepper and keep warm. Briefly fry the spring onions in the frying fat. Deglaze with the apricot puree and bring to a boil. Dice the apricot halves and add them with the green pepper. Season the sauce with salt and white pepper to taste. Serve the steaks with the sauce and rice.
