Low-carb peppers with cauliflower and minced meat

Ingredients for 1 servings:

  • 12 bell peppers
  • 1 head of cauliflower
  • 500 g minced beef
  • 250 g cheese, grated, light
  • 6 eggs
  • 250 g light mozzarella
  • 2 cans tomatoes, chopped
  • 1 tbsp broth, granulated
  • 2 dashes of Tabasco
  • pepper
  • Paprika powder
  • curry powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Clean and finely chop the cauliflower or grate it in a food processor. Fry the minced meat until crispy. Mix the cauliflower crumbs, eggs, grated cheese, and ground beef and season well. Remove the seeds from the peppers and fill them with the mixture. Place in a baking dish. Cover with mozzarella slices. Dissolve the pan juices in the strong stock and the chopped tomatoes and add to the baking dish. Bake at 180°C for about 60 minutes. Approximately 340 kcal per serving.
