Baked cauliflower

Ingredients for 4 servings:

  • 1 cauliflower
  • Baking spray (fat-free cooking spray)
  • 300 g cherry tomatoes
  • 500 g low-fat curd cheese
  • 2 eggs
  • 2 tsp mustard
  • 75 g cheese, grated, light, e.g. Cheddar
  • 1 handful of chives or spring onions
  • Salt and pepper, black

Working time approx. 20 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 15 minutes

Slimming World recipe

Preheat oven to 200ºC (top/bottom heat). Clean the cauliflower and cut it into florets, then arrange it in a baking dish. Spray it with cooking spray. Bake for 35-40 minutes, until the cauliflower is tender or starting to brown. Remove the dish from the oven, turn the cauliflower florets over, and scatter the tomatoes over it. Return it to the oven and cook for another 10 minutes, or until the tomatoes and cauliflower are tender. Set the broiler to high. Mix the quark, eggs, mustard, and half of the cheese, and season with salt and pepper to taste. Spread this mixture evenly over the vegetables, sprinkle with the remaining cheese, and broil the dish for about 5 minutes. Sprinkle the chives over the top before serving. Serve with a fresh salad.
