Zucchini – potato casserole with minced meat

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 500 g zucchini, sliced, green & yellow
  • 4 potatoes, cooked in slices
  • 2 onions, finely chopped red
  • 4 garlic cloves, finely chopped
  • 150 g tomato paste
  • 3 tsp herbs, Italian
  • 1 tbsp soy sauce
  • Oil, rapeseed oil for frying
  • chili oil
  • 1 point mozzarella
  • salt and pepper
  • 2 tomatoes, in pieces

Fry the minced meat, diced onion, and garlic in hot frying fat until crumbly, season with salt and pepper, add the Italian herbs, soy sauce, and tomato paste, mix well, and sauté briefly. Season with chili oil. Spread the mixture in a baking dish, alternately pressing the zucchini and potato slices tightly into the minced meat, swirling them in a shingle pattern. Sprinkle the tomato pieces over the top and scatter the mozzarella slices over the top. Bake at 180°C for approximately 30-40 minutes.
