Ingredients for 4 servings:

  • 4 turkey schnitzels
  • e.g. tortilla chips, mild
  • e.g. Cheddar cheese, grated
  • 1 avocado(s)
  • ½ lime(s)
  • e.g. Jalapeño(s)
  • ½ onion(s)
  • 1 bottle of Mexican salsa
  • salt and pepper
  • Paprika powder
  • Cayenne pepper
  • garlic powder
  • Fat for the mold

First, prepare the guacamole. This can be improved or supplemented in various ways. I made it very simply. Peel and pit the avocado, and mash it with a fork. Cut the lime half into three pieces; you don’t need the other half. Finely chop about half an onion and mix it with the avocado and a dash of lime juice. Season to taste with salt, a little pepper, and garlic powder. Then chill in the refrigerator. Preheat the oven to either grill or 200°C (top/bottom heat). In the meantime, crumble the tortilla chips; this is best done simply by hand or in a freezer bag. Fry the schnitzels in a pan for about 7 minutes on each side. Season with salt, pepper, paprika, and cayenne pepper. Finally, drizzle with a little lime juice. Grease a baking dish and spread the salsa on top. Place the schnitzels on top of the salsa. Generously spread the crumbled tortilla chips over the schnitzels and finish with the cheese. More or less, depending on your taste. Place the casserole dish in the oven, but only for the final baking, as otherwise the schnitzels will be too dry. Serve with guacamole and the jalapenos on the side. Serve with potato wedges and salad. Please add the ingredients to your taste without specifying the quantities.
