Ingredients for 4 servings:
- 500 g tripe, pre-cooked, not soured
- 2 garlic cloves, diced
- 1 large onion(s), diced
- 4 red chili peppers, sliced
- 2 tbsp tomato paste
- 1 liter beef broth
- 1 large can of pizza tomatoes
- 2 bay leaves
- 2 sprigs of marjoram
- 100 g sour cream
- n. B. Pepper, black

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Dice the onion and garlic, finely slice the chili, and sauté everything in oil. Briefly fry the tomato paste, then deglaze with the pizza tomatoes and beef broth. Add the tripe, marjoram, and bay leaves, and simmer for about 30 minutes. Before serving, add a generous dollop of sour cream to each plate. Serve with fresh bread.
