Filled tartlets

Ingredients for 12 servings:

  • 300 g mushrooms
  • 3 tbsp lemon juice
  • e.g. salt and pepper
  • Herbs
  • 2 tbsp crème fraîche
  • 6 slices of sausage (mortadella)
  • 6 slices of salami
  • 12 small tart bases (tartlets), for savory fillings, diameter about 6 cm
  • some basil

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Clean the mushrooms, cut into thin slices, drizzle with 3 tablespoons of lemon juice, season with salt, pepper, and Italian herbs, and let stand for several hours. Stir in 2 tablespoons of crème fraîche and season with salt and pepper, if desired. Cut out mortadella using a cutter (e.g., a flower-shaped cutter with a diameter of 8-9 cm). Cut the sausage slices once down the middle, shape each into a cone, and place them in 6 of the 12 tartlets. Cut the 6 salami slices down the middle, shape each into a cone, and place them in the remaining 6 tartlets. Just before serving, fill the sausage cones with the mushrooms and garnish with basil leaves.
