Ingredients for 2 servings:
- 5 large carrots
- 9 small cocktail tomatoes
- 1 onion(s)
- 1 clove(s) garlic
- 2 tbsp herb cream cheese
- some butter
- 1 tbsp tomato paste
- some water
- n. B. herbs
- 1 dashes lemon juice
- salt and pepper

Peel the carrots into strips using a vegetable peeler. Cut the cherry tomatoes into small pieces. Chop the onion and garlic. Sauté the onions and garlic in a little butter for 3-4 minutes. Then add the tomato paste and continue sautéing. I added a little water. Now add the peeled carrots and fry them. Then add the cherry tomatoes and let everything cook. Once everything is cooked, add the cream cheese, lemon juice, and herbs, if desired. Season with salt and pepper before serving. It also tastes great with mushrooms instead of the cherry tomatoes!
