Ingredients for 6 servings:

  • 1 onion(s)
  • 2 tbsp oil
  • 1 tbsp curry powder
  • 1.2 kg smoked pork
  • some broth
  • 600 g pineapple
  • 100 cheese (Emmental), grated
  • ½ tsp sweet paprika powder
  • 1 bunch of spring onions
  • 4 tbsp apricot jam
  • 200 g whipped cream
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

Preheat oven to 200 degrees Celsius. Peel and dice the onion. Heat oil in a roasting pan, fry the onion. Sprinkle with curry, sauté briefly. Pour in the stock. Rinse the meat, pat dry, and place on top. Braise for 60 minutes at 200 degrees Celsius. Peel the pineapple, cut into thin slices, and scoop out the core using a round corer. Mix the cheese with the paprika. Trim and wash the spring onions, then slice diagonally. After 45 minutes of cooking, spread the roast with 2-3 tablespoons of jam, place the pineapple slices on top. Sprinkle with cheese and finish roasting. Keep the roast warm in the oven. Bring the stock in the roasting pan to a boil, add the cream, spring onions, and remaining jam. Simmer the sauce for 2-3 minutes until thickened and season with salt and pepper. Slice the roast and serve with the sauce. Serve with rice.
