Oriental lentil vegetables

Ingredients for 2 servings:

  • 1 small onion(s), finely diced
  • Oil, e.g. rapeseed oil
  • 100 g soup vegetables (carrot, celery, leek), cleaned and finely chopped
  • 1 medium-sized potato(s), peeled, pre-cooked, diced
  • 80 g Lentils, Pui, red, fine
  • ¼ liter broth
  • some ginger, grated
  • 2 tsp spice mix (Raz el Hanout)
  • some salt
  • some pepper
  • some chili
  • Shot of balsamic vinegar, dark
  • Sugar or other sweetener
  • some Worcestershire sauce or Maggi

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Sauté the onion in oil, add the soup vegetables and lentils, and braise (approx. 5 minutes). Pour in the broth and simmer until soft (approx. 15 minutes). Add all the spices, stir, and season to taste. Serve the lentils with roast chicken, grilled meats, or fried fish!
