Turkish-style runner beans

Ingredients for 2 servings:

  • 500 g runner beans, fresh
  • 300 ml water
  • 200 g tomatoes from the can (Pelati)
  • 1 tbsp vegetable stock powder
  • 2 cloves garlic, finely chopped
  • 1 tsp turmeric
  • 2 tbsp tomato paste
  • ½ tsp Pul Biber
  • 100 g onion(s), cut into thin strips
  • possibly salt if needed
  • 1 tsp mint, dried

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash the green beans and trim off some of the tops and bottoms. Then cut into finger-length pieces. Bring the water, pelati, bouillon powder, garlic, turmeric, tomato paste, pul biber, and onions to a boil. Simmer the beans for about 25-30 minutes (depending on their thickness). Season with salt, if desired, and gently stir in the dried mint. Divide between two plates and serve. Serve with boiled potatoes. Tip: If you’re not vegan, this also works well as a vegetable side dish for meat.
