Ingredients for 4 servings:
- 500 g red cabbage, finely sliced
- 1 large onion(s), red, finely diced
- 2 oranges (or grapefruits), filleted
- 2 apples, diced
- 2 bananas, sliced
- 1 orange(s), the juice
- 1 lemon(s), the juice
- 1 tbsp honey
- 2 tbsp oil (walnut oil)
- 2 tbsp oil (sunflower oil)
- salt and pepper
- Walnuts, for garnishing
- Sesame, for garnishing
Instructions
Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes
Finely grate the red cabbage in a food processor, finely dice the onion, and mix both together. In a separate, larger bowl, prepare the fruity ingredients for the salad: Squeeze the juice of one orange and one lime and set aside. Cut the apples into small cubes, still peeling but removing the cores. Halve the oranges (or grapefruits) and scoop out the segments with a grapefruit spoon. Add the orange and lime juice, honey, walnut and sunflower oil, salt and pepper, and stir to combine. Finally, fold in the sliced bananas. Now, little by little, fold the red cabbage and onion mixture into the fruit and refrigerate for at least 2-3 hours. To serve, top the salad with walnut halves and sprinkle with sesame seeds. Like almost all salads containing cabbage, this one tastes even better the second day.
