Ingredients for 4 servings:
- 4 small bunch of radishes
- 3 apples (e.g. Braeburn, Elster or Rubinette)
- 16 walnuts (halves)
- 1 bunch arugula salad
- 2 tbsp balsamic vinegar cream
- 2 tbsp oil, walnut oil
- 1 tsp ready-made salad dressing mix (garden herbs)
- some salt and pepper
- 1 pinch(s) of sugar, or a little liquid sweetener
- 1 tbsp apple juice or lemon juice (or water)
- 2 tbsp chives, chopped fresh or fresh garden cress

crunchy and healthy, my family’s new favorite salad
Remove the stems from the radishes and clean them thoroughly. Rinse the apples briefly and rub them dry. Chop the apple and radishes into small pieces (grated radishes are fine, but you can also grate half an apple), then chop the rest into small pieces and add them to the bowl. Chop a few arugula leaves and add them to the salad. Mix together a vinaigrette from balsamic vinegar, oil, salad dressing, pepper, salt, sugar/sweetener, and apple/lemon juice. Then pour over the salad and mix well. Chop the walnut halves and sprinkle over the salad. Tip: A dollop of creamy natural yogurt, cottage cheese, or herb curd also makes a great dip, served separately! Very low in calories and rich in vitamins! The walnuts provide the essential polyunsaturated fatty acids and many additional valuable minerals and vitamins (sodium, potassium, calcium, phosphorus, magnesium, iron, vitamin A, vitamin E, vitamin B1, vitamin B6).
