Sweet potato noodles with apples

Ingredients for 3 servings:

  • 600 g potatoes, floury (potatoes), boiled, hot
  • 180 g flour
  • 20 g semolina
  • 1 egg yolk
  • 1 pinch of salt
  • 4 apples
  • 250 ml whipped cream
  • 1 tbsp sugar
  • 1 tbsp clarified butter
  • Flour for the work surface

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Recipe from my grandma

Peel the boiled, hot potatoes and press them through a potato ricer. Quickly knead them into a dough with the flour, semolina, egg yolk, and salt. Form them into thumb-thick rolls on a floured surface and cut off pieces about 3 cm long. Heat the clarified butter in a non-stick pan. Add the potato noodles and fry over low heat for about 20 minutes, turning frequently so they brown nicely all over. Peel the apples, quarter them, and core them. Slice them and add them to the pan with the potato noodles. Fry for another 20 minutes, until the apples are nice and soft. Then add the heavy cream and sugar and simmer for a few minutes until the cream becomes slightly thickened.
