Bratwurst – fennel – sauce for pasta

Ingredients for 4 servings:

  • 500 g pasta, macaroni (or other)
  • 500 g bratwurst, fresh
  • 400 g fennel
  • 1 large onion(s)
  • 2 small garlic cloves
  • 2 large cans of tomatoes, peeled
  • 2 bay leaves
  • salt and pepper
  • possibly thyme
  • Sugar
  • olive oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Remove the sausage meat from the casing and form it into small balls. Quarter the onion lengthwise and cut into very fine strips. Remove the stems and core of the fennel and cut into fine strips. Finely chop the garlic and lightly chop the tomatoes. Brown the sausage pieces in olive oil on all sides. Then add the onions until translucent. Now add the chopped garlic and fennel. Season with salt and pepper, and add a pinch of sugar. Now add the tomato sauce, a few fresh thyme sprigs, and the bay leaves, if desired. Simmer the sauce uncovered over low heat for about 15 minutes, while the pasta cooks until al dente. Season to taste with freshly ground pepper.
