Ingredients for 4 servings:
- 600 g sweet potatoes
- 1 bunch of soup vegetables
- 1 onion(s)
- 1 clove(s) garlic
- 600 ml vegetable stock
- 1 shot of dry white wine
- 1 cup of cream
- 1 piece(s) ginger root, fingertip-sized
- 1 orange(s)
- ½ lemon(s)
- 1 pinch(s) of cayenne pepper
- 1 pinch(s) of salt and pepper
- 1 tsp turmeric
- 1 tsp curry
- 1 pinch(s) of sugar
- 1 pinch(s) nutmeg
- 1 tbsp butter
- 150 g seedless grapes
- 100 g walnuts, chopped
- 1 tsp honey or jam
- 1 dashes balsamic vinegar

delicious quick soup with that certain something extra
First, peel the sweet potatoes and dice them. Then, dice the vegetables into small cubes. Chop the onion and garlic finely. Melt the butter in a saucepan, then sauté the onion and garlic until translucent. Briefly sauté the vegetables and add the sweet potatoes. Deglaze everything with a splash of white wine. Add the vegetable stock and cream, along with the spices salt, pepper, turmeric, curry powder, sugar, cayenne pepper, and nutmeg. Let everything simmer. Zest half a lemon, squeeze out 2 teaspoons of the juice, and add both to the soup. You’ll also need the zest of half an orange and the juice of a whole orange. Peel the ginger, slice it finely, and add it to the pan. Simmer the soup for about 20 minutes. When the vegetables are soft, puree everything with an immersion blender until you get a creamy soup. Finally, taste and adjust the seasoning if necessary. For the topping, halve the grapes. First, toast the walnuts in an ungreased pan, then set them aside in a bowl. Be careful when toasting; the walnuts must not burn! Then add a little olive oil to the pan, add the grapes, and toss everything together. Drizzle the honey and balsamic vinegar over the grapes and let it simmer briefly. Tip: You can use jam instead of honey. To serve: Ladle the soup into bowls and scatter the walnuts over the soup. Drizzle the grapes and the grape juice into the center of the soup.
