A Touch of Coconut – fruit salad

Ingredients for 8 servings:

  • 4 m.-sized banana(s)
  • 2 m.-sized orange(s)
  • 2 small apples
  • 2 small pears
  • 500 g yogurt (coconut or natural)
  • 8 tbsp desiccated coconut
  • 1 medium-sized lemon(s) (or some lemon juice)
  • 1 m.-sized orange(s) (or some orange juice)
  • 2 packets of vanilla sugar
  • possibly sugar, for sweetening
  • e.g. chips (coconut chips) for garnishing

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Fruit salad with yogurt and coconut

Peel the bananas and slice them thinly. Peel the oranges and dice them. Wash, halve, core, and dice the apples and pears. Place the fruit pieces in a bowl, squeeze the lemon and orange juice, and drizzle over the juice. Mix the yogurt with the desiccated coconut and vanilla sugar. Mix with the fruit pieces, season to taste, and add a little sugar if desired. Let it sit for a while, garnish with coconut chips, if desired, and serve chilled.
