The perfect fruit curd

Ingredients for 3 servings:

  • 500 g low-fat curd cheese
  • 1 cup of cream
  • 2 packets of vanilla sugar
  • Sugar
  • 600 g fruit as desired

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First, chop the fruit into small pieces or drain it if using canned fruit. I particularly recommend the combination of strawberries and bananas, or canned pineapple and mandarin oranges. You can use anything you like, just not fresh pineapple. Then, mix the quark with the cream and vanilla sugar until creamy and season with sugar to taste (if using canned fruit, you can also add a little of the juice, then perhaps use less cream). Finally, fold in the fruit. Tastes best when well chilled!
