Ingredients for 4 servings:
- 500 g mushrooms
- 2 garlic cloves
- 3 tbsp parsley, chopped
- 1 tbsp sugar
- 4 tbsp olive oil
- 2 tbsp Balsamic vinegar, red
- 125 ml red wine, dry
- 1 pinch(s) of salt and pepper

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes
Antipasti
Simply brush the mushrooms under water and trim the stems a little at the bottom. Leave small ones whole, and halve or quarter the very large ones. Caramelize the mushrooms in a pan with olive oil and sugar until they turn a nice dark brown. Finally, add the garlic and roast. Then deglaze with balsamic vinegar and red wine and reduce the liquid. Season the mushrooms with salt and pepper and transfer them to a sealable container with the sauce. Let stand for 1 day. Sprinkle with chopped parsley and serve.
